Soy Sesame Soba Noodle Bowl
INGREDIENTS:
✅ 75g soba noodles
✅ 100g smoked tofu, chopped
✅ 1 bunch of Bok choy
✅ 1 cup broccoli florets
✅ 100g smoked tofu, chopped
✅ 1 bunch of Bok choy
✅ 1 cup broccoli florets
Sauce:
✅ 2 tablespoons sweet soy sauce
✅ 2 tablespoons soy sauce
✅ 1 tablespoon brown sugar
✅ 3 tablespoons water
✅ 2 teaspoons sesame oil
✅ (Optional: Chilli oil)
Garnish:
✅ Spring onion
✅ Sesame seeds
✅ Avocado, sliced
METHOD:
✅ 1. Bring a large pot of water to a boil. Add in the noodles and vegetables and cook the noodles according to packet instructions (~3 mins).
✅ 2. Whilst the noodles are cooking, make the sauce by whisking together all the remaining ingredients in a large bowl.
✅ 3. Once the noodles are done, drain it along with the vegetables and transfer to a serving bowl.
✅ 4. Pour the sauce over the noodles through the sauce and mix well.
✅ 5. Top with tofu, spring onion, avocado and sesame seeds. Serve!
